I am an U.S citizen and I have applied for my parents i 485 on June. Their case is still on process. And they received an letter saying that they wont need an interview. So meanwhile when their case is pending, can I go outside of United States for a short trip? Will that have any effect on their case processing?

If you leave the U.S. while your parents are being adjusted, be sure and be back for any possible interview, since you are the petitioner. Visa conversions are seldom approved without interviews, so it is possible you misinterpreted correspondence you received from USCIS.
The last poster (abedsak) is obviously without any motive but to steer you to some nonsense Green Card lottery website.
His suggestion that your stay outside the U.S. must be "under 3 years" suggests total ignorance of this subject matter.
