Hi, We got 3 emails(guessing one for each form) saying "Your case has been accepted and routed to the USCIS". does that mean everything in our AOS package was correct? We did it without a lawyer.

Please note that it's only a cursory check on your submission such as completion of forms, signatures on all required pages, the correct fees etc.
They will go into more detail later as they look through all of your evidence and possibly then you may have a RFE (Request For Evidence) if they need further information or clarification. Hopefully not though!
