Interview in NJ

I have my interview on Wednesday. Its a marriage based interview. Been married 4 years and have 3 childten together. What can i expect during the interview?
Also, he is self employed. Last year he didnt make enoigh money to sign for me, but this year he will because his company expanded. Can we write a notirized letter to show that plus our bank account deposits?

They will ask you about how you and your husband met; (not in this order)
dating;
the proposal;
wedding;
your family;
employment;
residence;
special occasions;
recent events and some other random questions.
