I went to Canada 5 months back. All we needed was Valid Green Card and Valid Driving License(If not DL then Valid ID or Valid RTD or Valid Passport) should be sufficient.
Keeping the RTD Document or Valid Passport with you is always safe whenever you do international Travel.

How long does it take on average for the portal to be updated to show RFE response was received ? Just want to be completely sure it was indeed received. At point, if portal is not updated, would that be appropriate to start calling them? I know it says 60 days but that in my understanding after confirming response was received.
After 30 days, if no updates, do call USCIS.

    also keep your FedEx receipt.

Finally got my RFE (Medical) and am ready to mail everything back this week - Do I just send the entire notice ( all pages) in the same order along with the sealed medical form to the address they stated in the notice? That's it , right ? Just wanted to double check before mailing it out. Thanks
    Generally, yes.

However, generalization does not work in immigration.

You need to read the RFE and follow the instructions. As long as you followed it and sent all the doc it asked, you are good.

Also, can you renew it at some point when it's close to expiration date or do you have to wait till it's expired?
Refugee Travel Document is treated the same as passport in terms of validity requirements. And that depends on the country. Most countries require 6 months, some 3 month, very few only requires validity during your period of stay.

You can renewal anytime, just that you either need to send in your original travel doc when you renew or has to send in response of RFE if it's still valid. They will not issue you new ones unless you send in the original one that is still valid.

Also please please please read the instructions. It's all on the instructions.
