Adjustment of status for my mom

I started my mom's process in March and she has gotten her EAD, her work permit but the issue is she wants to travel and case is showing she will soon be scheduled for an interview. My question is can the interview be rescheduled if she's out of the country ? And also what's the wait time from receiving the work permit and GC

She should try not to reschedule her interview unless there's a really urgent reason. Also, she cannot leave the US while AOS is pending unless she has received Advance Parole (which you have not mentioned), or she will automatically abandon her AOS.
