I'm pretty much ready for my application except for Medicals.

Is it a potential delay if I just submit other forms without medicals? Like send medicals later

The medicals mater when you have your interview. Right now there is a delay and there are a few people I have seen that by the time they get to their interview their medicals already expired (only good for one year) they are having to do their medicals again. It is better that they have your medicals by the time you go to your interview.

Wait for RFE to do medicals or take to interview with you. Submit the rest without medicals

You can still file without medicals but they will say that the your paper work are incomplete and they will have to send you a RFE (request for evidence) which will delay your process.

From my personal experience, medical won't delay the process. I had similar situation as you, as I don't want to wait for the medical report to submit, so I went ahead with the filing. I did my medical right after submitting the papers, but in fact you don't have to rush, because they won't need it until the interview, and they don't allow you mail in. I submitted my 693 on the interview day, and got approved the same day.
