Also, what does the expiration date mean on the forms?

I-864EZ is a simplified version of I-864 for people who meet a set of conditions. They can still use I-864 if they want.

The expiration date of USCIS forms is meaningless for you. The only thing that matters is the edition date (on the lower left of each page of each form), which should be one of the editions listed as accepted in the webpage for the form.
