Job portability with AOS under EB-1 processing

My green card is being processed under EB-1 category, my I140 is approved and am expecting to submit 485 AOS application in the coming weeks. I want to change my job to advance my career. When is the earliest I can join a new employer - is it only after getting my green card, after getting my EAD card or something else? EB1s are taking upto a year nowadays and hence am curious to know.

Will there be any restriction in terms of what kinds of jobs I can take/the locations within US I can work in?

I assume your EB-1 is employer sponsored.

If you change your job before getting the green card, you will have to restart some of the processes at your new employer.

Could you elaborate which processes would need to be restarted? Some forums say it is ok to change after 180 days from 485 filing.

If employer sponsored your I-140 then is a bit tricky to change your job before getting green card.
