My concern is that since I do not file any Tax so my husband filed single no dependent Tax on April 2018. Would this affect my I-485 application and interview? Please share your opinion and experience. Thank you very much.

My I-130 was approved. I haven't filed I-485 because I'm waiting for J-1 waiver.

Two choices:
married filing separate
OR married filing jointly.
It is illegal to file Taxes Single if one is married.
He will have to amend his taxes and file the proper way. If he is able to amend them he can file married filing jointly and include you even though you didn?t have any income.
If he wasn?t married in 2017 then it?s ok with USCIS You two can file together for 2018.

We got married on Oct 2016. Our thought was that I am not required to file tax because I don't get paid by any US agency. So We thought we are neither "filing separate" nor "filing jointly", that is why we chose that he filed "single no dependent" tax return.

Yes. He can amend his filing status as long as if it hasn?t been more than three years from his last filing.
If he amends then ask him to file married filing Jointly even though you didn?t make any money.
If you don?t have a social security number just apply for Tax ID number to file.

I have a SSN and I do make money. I'm J-1 teacher and funded by a non-US agency. My responsible contact person in US told me that I do not need to claim tax. So...I assume would it better to choose "married filing separate" rather than "married filing jointly"? Or to choose "married filing jointly" and put my income as "o"? What's your thought on this? Thank you!!!
