Changing careers while I-485 is being processed

Hello,

I have concurrently filed my I-140 (in fact my employer has, EB2) and my I-485, I-765 and I-131.

I know the rules about the portability of my I-485 so long as the new job has the same classification.

Let's say I want to change careers. How long do I have to wait? If my job is completely different from the one for which the PERM was certified, when am I free to consider/take it, without running any risk?
