My I-485 Marriage interview is soon and I can't get my sponsor most recent tax return 2017 because he did not file yet, my interview is on Oct 2 and they need it for the interview, is there any alternatives I can do?

Did he file an extension to do his taxes? If so, take the letter you got from the IRS. That should be sufficient.

If it comes up during the interview, and you do not have your sponsor's most recent tax return, then you will likely get a RFE for it. You will have 90 days to respond it. Alternatively, you can find a different sponsor and file a new I-864.
