I got a letter asking for further information for my green card application and they asked for a copy of my birth certificate. I had already included this in my initial package. I am wondering why they would ask for it again?

Is this an original birth certificate you have or one that you got from your consulate?
If it is from the consulate you might need to get one from your country (your parents should get it and mail it to you. Also you they should scan & email it to you while you are waiting for it so you can get a certified translation in US).Marriage based AOS

No they don't need the original. I got RFE for the same reason.
This what i did with my lawyer:
1)Resend the copy of your birth certificate with the translation. (She included a letter stating that we submitted the document original and highlighted the important parts of it since it is quite long)
Note: Make sure it is in the original paper size. They don't want smaller or bigger version of it.
2)Send any additional proof of your birth.
I added 2 additional documents such as hospital bill/proof and a baptized proof. Both stating the date I was born and who the mother is.

I also had an RFE requesting my birth certificate. I had only submitted my birth registration which they found insufficient. Also, submit secondary evidence such as notarized affidavits from your parents, birth, school records etc. Good luckMarriage-based AOS; Concurrent filing I-485, I-130 I-765

Never send original documents as you may never get them back. But send clear colored copies.
