, My husband made a mistake on this form only with my birthday "day". I checked some info so that I can familiarize myself with his previous addresses. All the other forms are ok. I am a little concenrned that maybe we will not get approved at our interview coming up. What can be expected?

We made a similar mistake except on the I-130 where we listed my name instead of my spouse's name.
We mailed a revised I-130 off to the National Benefits Center however they returned it saying it was too late since the interview date was already set.
I would just change the birthdate info on the new G-325 and take 3-4 copies with you when you go to your interview. At some point you'll get to explain the error and hand them over to the immigration officer so he can replace the incorrect ones in your file.
That's what we did with our revised I-130 and there was no problem.
That is what I was thinking of doing. They probably won't even notice I am sure, but you never know. My date hasn't been set, but we expect it to be in June. I guess there is no need to send the correct copies then?

You could send a revised G325 off to the Lockbox together with a covering letter but the chances are that you'll get it back from them if they've already scheduled your I-485 interview.
From our own timeline of filing in mid February, we received the interview notice about four weeks later in late March (after they mailed it in mid March), with the interview itself in early May.
So if the USCIS is consistent, and it is four weeks since you filed, they should be about to schedule your interview. In this case, just hang on to the revised 325 and take it to your interview.
You can also set up a 'Case Status Online' customer account at http://www.immihelp.com/timings/tracking.jsp and check the latest status of your filings and the last activity dates which might give a few clues also.
