Does the processing time for 485 differ case by case at the same center .. Is it possible that 2 people applying at the same time at the same center would have diffent GC approval times assuming all docs are in place ?

It is quite possible, and there have been cases of different times for approval even though all the rest is same.

Even, follow to join spouse also get delayed where the rpincipal is approved.

You can never predict anything with INS!
