Got I-140 approved but current salary is still not as much as specified in Labor Certificate. The employer will not raise my salary at this point but agrees to write a letter stating that I will be paid no less than the specified salary upon the approval of green card. Will this get my I-485 through? Thanks for comments and suggestions.

Yes you will get your GC (assuming everything else is OK). The GC relates to a permanent position (not the temporary one you are occupying now). When it is approved you will basically be getting a new (permanent) job (even though your duties are probably identical to your current job).
This is perfectly valid. All Green Card processes are like this. The salary of your current (temporary) job is irrelevent. It can only come up if you have dependents (ie kids & a wife).
You would need to show that you currently have the means to support them. (Covered by the Affidavit of support). However that would only be relevent to THEIR I-485 approvals - NOT yours.
