Has anyone, travelled to Canada before on visit or vacation on AP while waiting on a decision after interview is done?

I am not sure what is special about Canada travel. I see it as going out of US. It could be Canada or India or UK etc. Yes, this is pretty usual scenario where people travel on Advance Parole while waiting for I-485 Adjudication pre or post interview. Why are you asking this Q is not clear to me. Are you planning to travel? What exactly is the question here.
Remember one thing, whenever you try to enter in US on Advance Parole, you WILL BE taken for secondary inspection which is a mandatory process for Customs Border Protection. You can be "Paroled" into US subject to CBP inspection if you show Advance Parole document. It is not treated as an "Admission" into US which typically happens when person shows a VISA at port of entry.

Thank you for replying my post and being explicit. My main question is since my visa is expired here and am waiting for my green card since I just finished with my interview. How do I apply for a Canadian visa? Do I go to my home country to apply or Is there a way I can apply from the states here ?

Just wait until you get your GC. Shouldnt take too long to get since you are done with your interview. I have AP and want to go somewhere. I am so close in getting my GC.. Im not risking anything especially the way this Administration is going.Newark Field Office. I485, I765, I130, I31 Marriage AOS
1/28/19 -case has been accepted
2/9/19 - Fingerprint review was COMPLETED on I-765 and I-485
2/12/19 - (I-485) Case b • 10/4/19 - Interview cancelled
10/19/19 - Interview was scheduled
12/3/19 - Interview completed!it
12/9/19 - New card is being produced
12/10/19 - i485 and I-130 case was approved

You have to apply for a Canada temporary resident visa (TRV) to travel to Canada as a US based person.
You can use your EAD document to establish as a US based person. You can apply online. They will ask you to send your passport to one of their two consular offices in the mainland US or to Ottawa for the visa foil.
You will also need to establish a Fedex account because you will need to have a shipping document preauthorized for them to send back your passport after it is stamped with the visa foil.
The exception to this advise is if your home country passport has visa-free privileges for short-term travel to Canada in which case, go for the trip and use your AP document to return to the US.
In any case, returning to the US with AP means going through secondary immigration clearance, which is really just procedure.
