I'm a F1 student who is married to an American citizen since 2017, we've been together since 2013 and I moved here in dec 2015. We are currently filling out these documents and it is fairly easy to get lost I've noticed. What supporting documents or other "I-type documents" do I actually need do file with the I-485 and I-130 for a marriage based Green card? We are both students so her dad is filing the Affidavit of support I-864. Is it OK to just bring the extra documents when we would be called for the interview or do I have to submit joint accounts right away? I also haven't seen a doctor for vaccines but I thought that was something I would do while in the process, even though I see other people here submit their vaccinations with I-485 etc.

Sending documents with your I-485 is good idea, that way the officer that will interview you can study your case before the interview.
There are some posts on the forum with good information about what to send. Basically you need to prove you are in a real relationship, so bank accounts, lease, tax, mortgage, wedding info, photos from wedding, travel together, etc.
You can wait on your medical. They will send you a courtesy letter to bring the sealed form I-693 to your interview.Nov 2018 - Package sent - EB - Texas Service Center
