When filling the I-864 with I-485 is it mandatory to send the 3-years tax transcripts or should I just include the most recent one?

They are looking for the last 3. Avoid their love notes (RFE and RFIE) and send as much as possible. They probably will tell you to bring 2019s to interview too so file early to have it on hand.

so even if the most recent tax transcript is enough to prove that my husband is financially able to sponsor me? cuz in the instructions, they are asking for the most recent one unless If I want to give more evidence, that's why I want to hear other people experience on this journey!

There is a difference of what is required and what is good practice. Showering USCIS with an abundance of evidence makes their job easier and from what the officer on my case said you made my job a lot easier. here is a quote from the Sound Immigration Website:

Tax records. You are required to provide documentation of your most recent year’s Federal income tax returns. You are not required to provide returns for the additional two preceding years, but it is generally best practice to do so.

Do as you see fit. The tax Transcripts can be downloaded and printed in about 10 minutes for free.

I will recommend you add 3 previous years even if your husband didn't meet the expected amount but the most recent tax year must meet the poverty guideline. Hope this helps?
