Your husband is sponsoring you when he had a Job and now he does not work there and has no income you would be needing a new 864 with explanation letter. however, since you have a Joint sponsor you would be perfectly okay. i would suggest check with a attorney to see if you need to add anything else in the RFE response. like azblk said, invoices are not paystubs so those will not do.
I almost had the similar situation as my work permit (H1B) would be expiring in 3 weeks time (end of Nov) and if i had been our sponsor as a family We would have been in trouble because i would have no source of income from December on wards (Wife Studying). thats the reason we filed 864A as well and my FIL helped us out. good thing you did the same.
Try to submit the response as soon as you can, Newark wait time is around 240 days and the sooner you sent the details the better. Best of luck.
