The USCIS updated my case to "Case Was Updated To Show Fingerprints Were Taken" after responding to an RFE, is that mean that my priority date has been changed to when they received the RFE?

I didn't even respond to REF yet, my I-765 changed to that info as well.

It has nothing to do with your RFE or PD.

It is new standard text of USCIS after an applicant has finished his/her fingerprint.

I also got the same update in Case Tracker app.A lot of people got similar update.Even when i looked at case tracker app ,i could see 100's of cases updated like that.I don't that it has any relevance. They just said the same thing in a different way. Also i looked at my myuscis account i don;t see the same update in there.I believe myuscis is the most trusted source to check the case status.
