AOS marriage. Employement and income

Please help me with some questions about AOS marriage adjustment of status (Forms I-485, I-130 + I130A, I-864).

1. Form I-864. My husband going to sponsor me and he has enough income for last year, but 2nd and 3rd recent year there wasn't a lot of income. Form I-864 asks about it but says you must attach a photocopy or transcript of income for the most recent year. Do we need to include information 2nd and 3rd recent year or leave it empty?
2. Forms I-485 About employment history. I have SSN but my status expired, I opened the S company a couple of years ago and I have EIN number. I don't take a salary from this company and didn't have any employer since. What explanation or what information to put in employment history? Am a business owner, self-employed or unemployed? Do I need to provide my company name and explanation that I'm an owner?
