informing school regarding AOS

if F1 student files for AOS, do they have to inform the school or not after filing or they have to inform after getting the green card.

Let them know you have filed the I-485, they more than likely won't do anything until the GC is issued, at which point they will terminate your SEVIS record.

You can use your EAD to work off campus etc (assuming you applied and get it)

So what happens once i finish my program and i already have EAD for GC.Still waiting on interview but finished my school. Someone please explain.Thanks.

From what I read, you can stay in F1 status as long as you follow all the F1 requirements. If you use your AOS EAD to work or AP to travel abroad and return to the USA you are no longer in F1 status and you should ask your school to properly close your SEVIS before either of those or if you finish your program.
