AOS and I-944 for parent

My mother-in-law is on a B-2 visa and currently in US with me and my wife. She is 77 years old and it is risky for her to travel back home due to COVID-19. We decided to apply for Greencard for her. Me and my wife are both USC. The confusing part is the I-944 form that needs to be filled out. My earnings are easily over the required 125% poverty level needed and I am the financial sponsor for her. She is retired and not have much savings. It is very hard to get the documentation from back home since she either needs to be physically present there or jump through the hoops to be able to obtain bank statements, retirement salary information, diplomas, etc..

Is that information really needed if I am the one financially supporting her and my income and assets are sufficient for passing the income test?

She needs to fill out I-944, but you can be included in her household on I-944 if you provide more than half of her support, so your income and assets can be included on her I-944.

I will include my assets/tax returns and they are easy to retrieve. I am providing pretty much 100% for her in the US. My plan is not to include her assets/income since my salary is enough for passing income test. Correct me if I am wrong but I assume it is not mandatory to include her assets.

Its not mandatory, but it is to prove that she won't be asking for public benefits after she gets her GC. Since your income is good enough you can ignore it, but include whatever is easily available.

Are printouts of FDs and account statements from internet banking sufficient proof of assets or do they ask for FD receipt or bank statement on bank's letterhead with stamp and seal?

Also, can I show HUF account which is in the applicant's name?

They ask for copies, so what my friend did is got someone mail the copies of his dad's diploma, retirement docs , document that he owns an apartment and I think all types of copies they already had available and then translated there and send them scanned copies, after that they mailed them in case they ask for originals! So if nothing else you can at least see if she has copies of her diplomas and some type of document showing she is retired and how much she gets paid retirement have someone scan it and the you can even translated here in the USA. I know income is big factor but they are also asking for education and even proof of English proficiency!
