I am applying for my spouse's Adjustment of status. Our co-sponsor is a retired businessman and has assets. Does he also need to provide W2 of 2020 and the last 3 income tax documents? He works part time and receives social security income,

Yes! For every form I-864 you need to provide the supporting documents in the instructions, unless his social security is solely enough, then no W2 in needed.
