I was all excited when I found out that my I-130 (obtained via my sister) priority date of APR01-2001 has become current!

Now, I'm a little concerned about this whole sponsorship thing (I-864) and am looking for options.
My situation:
1) My sister still lives in NY, but I moved with my family down to FL years ago
2) I obtained a legal tax id (obviously NOT an SS#, i.e. start with 999-xx-xxx) and have been working in the same profession for many years paying taxes regularly. However, since that work was not while technically being an LPR, I don't believe any of those quarters are qualifying.
3) My sister only made about $18K last year.
4) I have two children that want to apply for the adjustment of status at the same time as me (now)
From what I'm reading, it sounds like the sum of all sponsors (primary and joint) would need to have an income of 125% of the poverty live for a household size that includes my sister, her husband, their child, me, and my two kids. I read that on the I-864p as needing to show $38,525 of sponsorship income (for 6 people).
I probably can't use my income as a household member, since my tax returns obviously show that I don't live with her anymore.
I left my sister a voice mail to see if her hubby made more than $21K last year, which would may make this work, I think.
To what extent do they verify that you actually LIVE with your sponsor? Should I move back in with her and quit my job in FL? Should I have my medical exam done in NY near her address and just use her address for everything?
I have so many U.S. Citizen, non-relative, friends that would sponsor me in a heartbeat, but I don't think they can qualify as sponsors.
