Is this possible? My case was approved on 7/28 and on 7/29 it got updated to “Case Was Updated To Show Fingerprints Were Taken”

Yes, sometimes they update the system like that.
Most likely you will get another update (or a few) next week.
The important update is "New Card Is Being Produced", I hope you get that next.
