Can one quit and stay home or pursue higher education after GC?

After getting employment based GC and working for same employer for 6 months or so,Can I quit and join a college to pursue higher education or do nothing and stay home?

My friend said INS has the right to take back his/her green card if he/she changes the job within 6 months. But in case of staying home to study, how can we say?
