Is there any option to change employer while Green Card in process

HI All,
I have very basic question related GC Process

I would like to go for GC process with my current employer. However I am aware GC processing takes long time.

Do I need to stay with current employer until GC process completes? Is there any option to change employer without jeopardizing my GC application?
