Until when can I add my wife?

I am unmarried and planning to start my GC process.

Could you please let know until what stage during my GC process will I be able to add my wife, if I marry after my GC process has started?

Good question. No way to tell. Current PD dates based on your country of birth can be found out from the visa bulletin.

Labor 6-12 months
I140 2-8 months
When PD becomes current, then you file for I485.

say if I add my wife before I-485...will she join me as a H1-B dependent or under some other category? Also, will (when) she be eligible to work?

I am not sure I understand your question. You can add a derivative only at the 485 stage. What you mention during I140 is just information about the spouse to the lawfirms.

Sorry about the unclear question.
I am currently on H1-B and say I file my labor under EB-2 next month...get married in couple of months ( and bring my wife on H1-B dependent visa)...file for my I-140 etc and have my wife included in the application. As she would be joining me as H1-B dependent, she can not work. Can she work here full time, during any stage of the green card process? Or does she have to wait till our PDs are current and get our green card?

When you apply for 485 for your spouse when the PD is current, you can also apply for EAD and after it's approval, she can work.

Appreciate response to my following questions regarding GC processing.
1.When I checked online the PD for India (EB2) has advanced to May 2006. Does it mean that those who applied for GC before May 2006 have got their GC? Or does it mean that those who filed for their I485 before May 2006 have got their GC?
2. At what stage do I get the EAD card? How long it takes to come?
3. At what stage of my processing am I not advised to travel to India?
4. Say my company files for my PERM in Sep 2010 and my I140 is approved by Aug 2011. Do I file for my I485 in Aug 2011?
