My daughter sponsored me for a green card. I understand at present that my other unmarried children do not automatically get one. They have also had I-130s approved. My question is: If I get my green card and then sponsor the rest of my children, will they keep the date their original I-130s were approved and does their age freeze at that point?

I assume that your daughter has filed for those I-130s for her brothers and sisters.
When you get your green card. You will apply for your unmarried children. You CAN NOT transfer the priority dates from the approved petitions because of different Petitions.
Age will freeze when you apply for their pettion.
