My wife is filling an affidavit of support for my adjustment of status and we have a second sponsor added because she does not make enough. Can I still get a letter from my church indicating the church's support to me in addition?

A letter from a church would probably be viewed as a "character" reference, rather than any kind of credible sponsorship resource.
