I-864 Question - Just started job!! Help

I'm going to be filing the i-130, i-485, i-864 and i-765 concurrently.

My husband just started his job this past month so we are only sending his employment verification letter (which is a printed out email from the company) stating that he got the job. since he has no previous pay stubs or anything yet, can we just bring that all to the interview?

What if we manage to find a joint sponsor (just in case, for back up) and have them fill out that application and paperwork and bring that with us to the interview just in case. would that be ok? Please help!

The statement saying when he was hired, what for, salary/wage can be used as supporting documentiation to prove current income. Proving past income is important too though it seems.
