My I-130 petition was approved a year ago. I did not file my adjustment of status at that time because I was expecting changes on the job front that might require me to move. We wanted to file the 485 when everything was 'stable'. My wife and I eventually moved to another state and are now ready to file the 485. Will the 'delay' of a year cause any problems with this filing?

Yes, more than a year's delay after your approval for filing change of status will be a possible issue for you.
Make sure you work with a very good attorney to handle your case properly.
At no point you want the slightest possibility of rejection of your I-485, else that may cause you to go back to your home country.
