I-864 from overseas?

Ok, I have started my research and I hit a bump.

I am an American married to a Taiwanese woman. We have a daughter. We both currently live and work in Taiwan.

If we want to move to the US, how could I prove income, since I would obviously have to change jobs?

I am sure others have been in this situation. Any help would be great.
