Documents for GC - original or copies?

This question may have been answered many times but I am asking again. So appreciate an answer please and apologies in advance.

1. Do we need to submit ANY original document? Or can all documents for me (as sponsor) and my sister and nephew (as beneficiaries) be photocopies?

2. If all goes well, my nephew is most likely going to be more than 21 years of age by the time my sister gets the GC. I know my sister can apply for his GC then separately. How long do you think my nephew's process will take to grant him GC?
