Portability of Approved I-140

I-140 application is approved under EB-2 category from TX service center. I intend to relocate to California on a different H-1b. I have been advised to file for AOS after moving to California rather than doing it here due to planned relocation due to several reasons including address change and chances of faster processing times of I-485 in CA etc.
Question: Are there any risks involved with such process? Should I simply do AOS here and then move?
