    If my husband and I are co-sponsoring my mother, would we be considered two sponsors, even though we have joint assets and bank accounts? The only difference is my husband’s income, which is considerably higher than mine.

    Do we need to file two separate I-864 forms, or can we jointly file only one form?

    No, your husband can be the main sponsor of I-864 and use your income as a household income. You will need to fill out I-864A for household income. You don't need two separate I-864.
