Visit US while I-140 and I-485 are filed.

I am a US citizen and I am planning to move back to the US with my wife and son (my wife has already a job offer). I am intending to file I-140 and I-485 concurrently via Consular Processing. We intend to arrive on late July (that is in 2 - 3 months). Are they available to travel to the US while this forms are currently processing?
Do you recommend to do it via Adjustment of Status instead?
