I have never worked for my GC sponsoring employer. I'm planning to join them after my GC approval. Will this pose any problem during CP ? or it is safe to go with the I-485 option ? please advice.

Not Legal Advice:
As long as you intend to work for them once you get your GC there will be no problem. All Employment based green cards are issued under these circumstances.
Your current employment is irrelevant to the process. It always relates to job in the future so current one does not matter.

kind of related questions I would to add here.
If I got lay-off from the company who is sponsoring my green card but get an job offer with other company with the same capacity before the interview, can I still get approval? If I can do this, what docs I need to get from both companies?
Any help would be greatly appreciated.
