What do I do if my company is going under..?.

What are my options is my company goes under, and i am in the middle of my 3rd stage..?.

I have already got my I-140 approval. The NVC has not received my papers yet, and I going to London for processing.

Can someone please tell me what options I have available?.

Assume you do CP. Not legal advise:

You must issue an employment verification letter and take an oath you are going back to work for the company which sponsored you.
To be fine, you need to be employed by that comapny until you come back to the US. If you manage to work for them after you return from your interview and then be laid off, you are probably fine.
If the company goes under before you return to the US, legally you probably have to start from scratch.

If you have filed I-485 after october (not doing CP) and 180 days have passed, you may be fine too, but this is risky uncharted territory.
