Submitting resume for visa processing

My situation is a bit unique, I have x years of experience on h1B, and then later moved to y country and there since I couldn't find a job easily, I decided to open an online retail store but which didn't work and I closed the business after few years and moved back to US. This was all unpaid experience but a true experience. My dilemma is should I include this experience when applying for H1B? If I omit this experience it shows a long gap in my resume so is that okay? Currently I'm on different visa and also gained significant work experience in my field.
Also related question, I did some volunteer work so should I include that separately as project work in my resume or completely omit it?
