Can we submit expired EAD for proof for PIO

Hi Friends,
We need to apply for PIO for our baby and one of the requirements is that we need to submit either GC or EAD for Visa status verification. Our current EADs have expired and we are waiting for approval of the renewed EAD can we send in copies of those expired EADs only ?

Also , is there any way to expedite the PIO processing even though we send in the docs by mail ? We need to apply at the Chicago embassy.
