Need help with passport renewal in B2 AOS

Hi everyone, I need some help and advice. My parents came here on B2 visa and we applied for their Green Card. While the 485/EAD/AP is pending, their passports are expiring in April 2023. I would like to get them renewed. Did anyone do this in this scenario

1. How to produce proof of address that is required for passport renewal. In VFS Global checklist page, they say "In case of applicant residing with parents/children/brother/Sister, a notarized undertaking from them with one of the notarized copies of address proof as indicated above." Where can I get the Undertaking form. I do not see any link for it in VFS or anywhere else. Is it just a custom statement that they live with us at this address ?
2. Also, the list of documents provided by VFS does not acknowledge the Adjustment of Status / Notice Received phase, how will that impact the application, should we just send I-485 receipt notice in lieu of B2 visa copy.
3. We live in NJ, so we can go to NY Consulate if absolutely needed.
