contract term for NIW Petition

I am currently working as primary care physician in a NIW eligible place. The contract term with this employer is 3 years. I do not want to extend the contract with the current employer. If I obtain another 3 year contract from a second employer ( who is also NIW eligible place), can I start NIW petition with 2 contracts ( to show the term of employment more than 5 years) ?

-- Or do I have to have a single contract with term of employment of 5 years in the underserved area?
