Verification letters from previous employer

My previous employer is not interested in providing an Employment Verification letter for me. I was the ONLY consultant while I worked for this employer and I cannot get an affidavit from any of my coworkers.

What are my options?

Please help!!

Also, in what stage of the GC would I need to submit these docs?

check with your lawers. Probably you can submit the paystub /salary deposit into the bank etc.,
