Zurich trip: Need advise on Schengen visa for a specific scenario

Dear All,
I live in California with an H1B visa and my fiance is in India. After our wedding in India in June, we are planning to visit Zurich on our way back to California. While looking at the process to apply Schengen visa at the Swiss consulate, I had the following questions,

1. In the Schengen Visa form - there are these following questions:
19) Current Occupation
20) Employer name and address

My fiance is currently not working. My question is by saying "Not working" are there any chances that her visa be rejected?

2. Entry permit for final country of destination.
Our final country of destination will be United States. She does not have an entry permit yet - her dependent visa will be applied for only after our wedding.

Since we want to leave in a week after our wedding, we wanted to apply for Schengen visa before hand and obtain the same. But since she will not have entry permit for her final country of destination, what are the options we have here?
I do not want to wait till we obtain her dependent visa and then apply for the Schengen visa as it would be too late.
Please advise us on this.

Also if you guys can list all the documents that we need to carry to obtain the visa,

Like Travel Insurance, Schengen Insurance, Bank account statement et cetra, that would be very helpful.

I am exactly in the same position as you were. Can you please explain all the details on how you came over against these odds? I am in confused state on how to apply Schengen visa for my fiancée in India.
