My in-laws have their visa appointment scheduled on July 5th - We did their I130 back in Oct 2020 which was DQ in April 2021. How to prove current income for a self-employed or business owner who doesn't have pay stubs, w2, or 1099s.?

I am a petitioner (sponsorer), and got I-130 approved from USCIS. I live in the USA while beneficiary lives abroad.
