I have submitted my wife's N-400 document recently but did not Opted for Name change, is there a way to change the Name during the process or during the Interview process? Please advice.

You can change your answer in the interview or update any information or mistake in you N400. You are under oath in the interview.
The only thing will be that they could ask you why you want to change the name.
So no big deal.

Yes, he should be able to change name during interview, but a caution...it will delay ur citizenship oath atleast by 2-3months because it goes to court for the Name change. I have many of them on this forum mentioning this.
