Under the question "Name of spouseand children accompanying or following to join person:"... do I also lstate my fiancee's name here, as my "Spouse:"?

No, you write "NA". The I-134 is a form used in conjunction with other visa applications, not just the K-1. And your fiancee is your fiancee. Only after you are married is she your spouse.
