I'm confuse, is it really necessary to have a proof of engagement like ring, receipt of the ring or engagement party or proposal?

No. What consulate are you dealing with? Some ask for more than others, but your letter of intent to marry which you and your fiance(e) would have both submitted with your I129F is what they are looking for. Not all couples have a formal engagement and some, like myself, only want one ring which serves as wedding and engagement ring, so there is no receipt.
